Personally, I use Canon 40D and 5DMkII. Its Canon V Nikon really (a bit like PC V Mac). Both will get the job done and it comes down to personal preference.
Though, more important than the camera itself is:
1. The lenses. A poor quality lens on the best camera will result in a poor image.
2. The ability of the photographer. As stated, all the best gear in the world cant make a bad photo a good one.
It varies by State and country but I would say if you budget around $2,000 you should get something decent.
Good is seldom cheap and cheap is seldom good.
Get a full-time wedding photographer – it takes years of experience to be able to photograph a wedding well. I am a wedding photographer and I had a bride who's wedding I photographed just over a week ago, phone yesterday in a panic about her photos. It seems all her friends & relatives who view themselves as "good photographers", failed to get any good photographs, so she was worried and asked did I get any good ones? Well, yes….! It's what I do. I KNOW how to take great photographs in a variety of situations, and yes, even the tricky ones. How? Experience. Studio experience. Lighting experience. 2nd shooter wedding experience. Wedding experience…..for years and years. THAT'S one of the things you pay for, along with peace of mind, good camera gear, CLEAN camera gear (when is the last time a CHEAP photographer cleaned his/her lens or ccd/cmos sensor?), post production experience (the reason NOT to get your images on just cd/dvd).
Spend what you need to in your area, to get someone who fits in with the style of photography that YOU guys like, who will do what you want, and of course who is professional in their attitude. Next to your rings your photographs will be the most looked at thing you have AFTER your wedding, to remember it by. Good luck and have fun!

We used a professional because a friend of ours used a relation to take photographs and it was a shambles. It costs us a little over $3,000AUS but we got more than we expected.

If I were in your shoes I would do them at cost. Meaning that I would charge for travel expenses and any costs to develop pics, or albums or whatnot. I wouldn't charge for my time to shoot the wedding or anything like that. Tell her that you are only charging what it is actually costing you to do this, and that is their gift. Then you won't have to worry about getting a gift as well. I'm sure she would appreciate that much more than another toaster. Photographers are really expensive.

If you want something professional, contact Insight Media, or Clear Channel, or any other major marketing firms – they all cater to small enterprises as well with their small business divisions. The alternative would be to learn to do it yourself (it's actually not that hard to do).
I'd guess you are looking at somewhere in the 2500-3500 dollar range.

I am a professional wedding videographer in the New Jersey and PA areas, and I find the best method of advertising is theknot.com… it can be a bit pricey but you get many qualified leads from the website. Of course, marketing wise, word of mouth will be your best bet, but you have to get your business going before this will kick in. Give a great service, and exceed the expectations of your client, and your business will continue to grow.

You need to talk to the photographer because they are his photos. He has complete rights to them, even though you hold a CD. You can look in your contract, but your best bet is to talk to him about it.
If you really don't want to speak to him again, just send him an email. Tell him you'd put his copyright on them and follow his rules. If you really want to use them, you need to okay it by him or you can be in for some big trouble. I know he wasn't an easy person to work with, but sending an email and compromising with him now will be better than trying to get out of a lawsuit later!
Sorry you had such a bad experience with the photography. That's one of my big fears. My wedding photography is so important to me! At least you got some good ones out of it!
